I think I've seen pretty much every good gore video there is that isn't one of the cartel videos because those just get boring as they all start to look the same. The cartel is actually pretty merciful compared to some of the stuff out there.

The technique for that is to carefully insert the knife into the neck and then cut from inside to outside, point being to not harm the vessels that carry blood to brain or else the guy will lose consciousness. The vessels are located a bit further inside the neck and if you cut from outside to inside there's a high chance you'd cut them.
