Even though I prefer Maul, Dooku was just.... well, too good. He was the absolute unquestioned master of the Traditional Lightsaber dueling style of Makashi which focusses primarily as a Lightsaber dueling stance. The only ones who even matched Dooku in terms of Lightsaber dueling was Mace Windu who created the most potent Lightsaber combat style known as Vaapad (aka using Juyo as a lightsider and well you can read into how it is commonly known as the best traditional lightsaber form since only 1 mastered it) and Yoda (who is well..... the Grandmaster of the Jedi). Bearing also in mind that Dooku is no slouch with the force either considering he mastered Full Body levitation which is a technique very few Jedi have mastered (including presumably Mace and actually Yoda), furthermore he was very familiar with all Jedi battle tactics as he trained students formerly at the Jedi Academy at an advanced level in all of the forms of lightsaber combat.

Unarmed fight is 50/50 chance same with melee weapons. Ranged weapons he'd probably shoot first so he'd have an advantage there.
