I actually know a trick on how to disarm an armed assailant from a TV show years ago. It wasn't even some scripted show either, it was a show about martial arts.
The trick is you don't look the assailant in the eyes, you lean away from the gun while grabbing the wrist of the arm that's holding the gun and you pull the gun away from the fingers.
