Just tell her something like "I missed you at the event." and then open up for something new to do, but leave the ball in her court to see if she is interested or not. Say something like "I was thinking of doing XXX (movie, dinner, whatever) this weekend, would you like to come, or do you have something else in mind you'd like to do?"

Just ask her. If she wants to come when you invite her the second time, that's a good sign, if she doesn't, well then at least you tried and it's not awkward. Just do it man.
