How is everclear any different from vodka for cocktails, aside from being way better because the drink tastes better because less watered down. For cocktail you always use the highest abv available for better drinks, liqueurs being the only exception.

If you boil it down to half volume then dilute it back to full volume with water you'll have removed most of the alcohol. So theoretically you could calculate ABV from the difference between that and the unboiled drink (remove the bubbles first).
