The Tatami Galaxy is a very unorthodox and cute love story, and one of my favorite anime shows.

Lovely Complex has the best lovestory, without any waifushit.
Kare Kano is great too, but only the first half. Stop watching once they start with the recaps.
Tonari no Kaibutsu-kun is also worth looking into, but it's less about the love story and more about the different characters. Same goes for Gekkan Shoujo Nozaki-kun.
