I just want her to shut the fuck up about it. Don't really care about her being vegan, the only thing that kinda bothers me is that we can no longer eat at together really, and then she complains about not having anything to eat other than fruit (but what the fuck do expect when youre vegan?).

How about the millennias worth of our ancestors who passed on their genes to us after sustaining themselves on meats and animal products? That was always good enough for me. My cat gets kibble whenever she wants, but it won't stop her killing spree.

That's not really a good strategy. If you challenge her on a rational basis you'll come out ahead, but it won't make your relationship any better. You need to bring these exact complaints to her; you preach at me all the time, start fights all the time, and we can't eat together anymore because of your diet. I care about you but these things are driving me insane.
From there you can hopefully negotiate some solutions. If she has any maturity at all.

Some youtube bitch pointed out all the differences between humans and carnivores like dogs (while totally disregarding all the differences between humans and prey animals like cows,) so apparently we arent meant to eat meat because we dont exactly resemble a canine or feline

Vegans/vegetarians risk more brain disorders (dementia/Alzheimers) by eliminating animal fats from their diets and trying to supplement with nuts/dairy, which are notoriously hard on the GI tract as you age.
If she went seafood/eggs/some chicken, she'd be in the right, but if she won't listen to facts, just cut her loose.
