To me someone who is interesting is someone who talks honestly with me. I'm a very honest person, to a fault actually, and I appreciate the same in return. It's surprisingly difficult to find a girl that doesn't lie to your face every five minutes.
I think all people are capable of being interesting if they just open themselves up, what bores me is when after weeks of getting to know someone I still find myself talking to a "persona" instead of a person. Every single human being on Earth has a unique life experience and a unique brain andsoul, that is what makes a person interesting, not their retarded worldly hobbies or past-times.

Hobbies very rarely make someone interesting, personality and charisma does. I have met plenty of people with no real hobbies, or any they seriously pursued, but were extremely popular and enjoyable to be around just for their personality. On the opposite end I have met people extremely embedded in very detailed and expansive hobbies they could write a book about, but they're extremely boring. Many people will claim that someone with a lot of knowledge in some niche hobby is always interesting by virtue of the knowledge being interesting, but if that were the case people wouldn't find friends or socialize on the internet, but rath spend free moments researching the endless amount of information available. Even then, those boring people frequently can't even provide the same level of intrigue as an article related to the subject, giving them little purpose at all. Unfortunately I am neither knowledgeable nor charismatic, just boring. I suck at all my hobbies, so the only value they serve is entertaiment
