It depends entirely on the kind of game you enjoy, but even then disregarding the gameplay they are by any metric (one far more than two) very well designed games with well told, subtle stories.
People often describe them as 3D metroid-vania.
Although it does annoy me when fanboys go on about how hard they are, they're no harder than basically any game that came out pre-2006. They're unforgiving and don't hold your hand like many modern games, but that just makes victory all the more satisfying.

The main reason why 2 was so bad was because miyazaki was much, much less involved with 2 because he was working on bloodborne, he's back to work on three though.

This was never true of any Souls game. It just does not, relatively, take very long to become good at a Souls game compared to an RTS or a MOBA or a fighting game or even an FPS as simple as Counter Strike. Weapons and builds are also, in every Souls game, wildly unbalanced. It isn't something to be ashamed of playing for fun, but it isn't a competitive game. If there was not significant netplay lag it would be almost completely nonviable as a competitive activity because you could easily react to everything people do.
