mushishi is slice of life except seinen and more about humanistic themes and it explores a lot of literary elements. it can be max comfy at times too though. it's about a travelling exorcist that helps out japanese locals with discordant natural spirits/phenomena. it's not violent in the slightest, it's very good paced and it has a second season that i've been meaning to watch.
kino no tabi is about a person that travels from country to country via motorcycle, it's set in a more european setting but it has a similar feeling to mushishi. explores humanistic themes and has a lot to say/philosophize about if you're an analytical type.
samurai champloo is a pretty plebcore anime but i love it cause nostalgia. it's just basic samurai ronin type shit except it has elements of hip hop culture and lots of interesting story layers... with one of the best OSTs hands down in any anime, think cowboy bebop except with samurais and rap rather than space cowboys and jazz
tatami galaxy is a pretty stylized work, it's heavily reliant on its unique art style and plot pacing, it's about a college student exploring multiple different clubs while also dealing with beguilering friends and mentors all while trying to get the lead female of the series. it's amazing and it has a great OST as well, awesome plot and literary direction
