Yellow peas, lentils, beans, rice, pasta. Just learn to make it vegetarian since meat is the most expensive staple food.
Pork or possibly chicken innards like hearts, livers, kidneys are cheaper than meat though. But don't eat any brains, because of prions.
Also mixed frozen vegetable bags are really convenient.

I have been eating white rice (no sausages of any kind or whatever) for lunch all the week. It kinda tastes like water. For dinner at night I eat meat with eggs or pasta (no condiments neither) and cereals or fruit for breakfast.
Rice may have no taste, but it has many nutrients (proteins, carbohydrates, vitamins, etc.), is cheap, easy to make and easy to clean dishes after eating. Same with the other foods I mentioned.

If you're on a tight budget, mostly vegetarian is the way to go.
If you want some meat in your diet, wait and buy it when it's on sale. You can find certain things (chicken breast, turkey, occasionally pork shoulder) for around $1 a pound from time to time, which you should be able to afford occasionally. After the holidays are especially good times to buy meat on sale. Ham after Christmas and Easter, BBQ type stuff after July 4th, and turkeys after thanksgiving. If you can scrounge up 10 bucks, you can generally get a 20 pound turkey after thanksgiving when the stores are looking to get rid of them. That will last you a long time if you're only cooking for yourself.
