What do you do when you're 20+ years old and don't have a single thing that interests you in life?

Its tough to know what to suggest without knowing your circumstances, but you don't have to commit to anything. Are you complete autist robot? Almost normie? Inbetween cyborg? Are you capable of socialising? Is your family rich, poor,. middle income? What's the job market like where you are?
If you don't have interests then obviously you're depressed, but how you move forward and if you can break out of it depends a lot on your situation. You don't need concrete plans. Society teaches that you need concrete plans, a steady job, a degree, a 401k - fuck that. You are a floating consciousness surrounded by other floating consciousnesses. Your only need is to extract the maximum amount of pleasure from your surroundings.
If I make the assumption that you hit the mid criteria for all of the above I would suggest you keep pursuing any employment that your find interesting (or least painful). Try to get as much enjoyment as possible from any situation, even if its the little pleasures - while trying to save up as much money as possible. Try to socialise as much as possible to pick up general skills. Even if you barely carry yourself socialising, keep at it until something sticks. Try to put yourself in situations which you know have the potential to be enjoyable, but put you out of your comfort zone. If the job market is shit where you are, and if you're not a massive autist, then fuck it. Move.
It might not work, and you might waste your time just feeling shit about it. But fuck it. You'll be in a hole in the ground within 60 years, might as well give it a couple goes.

I don't know, it's been a long time since I've really interacted people. I guess I'm an autist robot, I don't have any friends and I'm in therapy for anxiety, depression, etc. I could maybe manage cyborg, that's my end goal if things work out okay, but I don't know.

Ok, well it sounds tough .. but you're in therapy which is a start and you're addressing the problem. Try and break everything down into stepping stones.
How about geeky clubs? Vidya, cards, board games - it isn't great but its a stepping stone. That's always a good start, everyone there is cyborg or lower. Might be fucking scary at first but you know most of the guys there are in a similar boat. That would be good to get your confidence up to move onto bigger things. I don't want to be a dick, but you say it's been a long time since you've interacted with people so i'll say it - personal hygiene. Its a big problem with people on the spectrum and its a easily solved problem that has massive consequences. Just a reminder. Wash daily, you'll be surprised how much it actually helps with mood too.
The next move would be identifying a job with co-workers you could enjoy being around, then working up to seeing them out of work. You might even strike it lucky and befriend a cyborg at a geek club who could introduce you to better things. You say you have no friends, do you have anyone at all remotely close you could do activities with?
I would suggest trying to do as many little things as possible to build confidence. The brain likes busy.
