3 is the best one. So, if you only plan on playing one, then that's the best choice (you don't miss out on a lot by skipping the first one). As 1-2 haven't aged that well

Better characters and I think better music. You're just a couple tryhard wannabe patricians. Not nearly enough character interactions in the Mother series, and none of the music stood out to me. Undertale gave me feels, The Earthbound series also did, but to a much, much lesser extent.

Hey friend, I find that I like Undertake because I am a filthy casual that rarely plays new games. Specifically, I enjoyed everything in it that I would a TV show; characters, story, interactions, music, which I'd think would make for a terrible base for a game, but Undertake pulled it off really well.
What I'm saying is that the gameplay is second in the appeal of Undertale and that's ok.
