Just practice with the mechanics. Taurus is not hard. You can do the standard way:

>dash away
You can lure him to the tower:

If you have problems with taurus demon you should learn the core game play mechanics.
Try to doge hollows through rolling, make sure your equip load is below 50%.
Learn to attack at the right times and when to block.
And finally don't get too close to the ledge then he cant knock you off.

The big black knights are tower knights and generally guard some sort of loot like a firekeeper's soul. I think they have a chance to drop their shit too but good luck being able to use any of it.
