Also to your point, the movie seems to suggest that the only way for someone like Shrek to be truly happy is if they met their soulmate... otherwise they'd be monsters.

Donkey represents failed normies. As soon as he becomes unwanted, he hides behind Shrek for protection. And as soon as Shrek doesn't want him around anymore, he claims a part of his space.
Fiona is the girl who's equal to Shrek and obviously compatible on many levels, yet insists on ridiculous prince charming fantasies because that's what she was raised on. If she truly cared for Shrek the way Shrek cared for her, she would've explained the misunderstanding that Shrek had was a mistake, regardless of Farquaad was there or not. Yet, she chooses to remain a princess and insists on getting married despite being obviously unhappy. Shrek at least has the excuse of experiencing that kind of cruelty from other humans yet Fiona does not.

Yeah, it's a fairly obvious deconstruction of "gallant knight saves the princess" story yet it also tries to be a redemption story of a character like Shrek who's portrayed as a monster created through circumstance yet is simply told "cakes have layers, be like a cake." I'm just saying it fails on that level.
Something needs to be said regarding the soundtrack, which I believe is its own parallel mode of symbolism.
The movie begins with "All Star", a song epitomizing the ignorant bliss of a hedonistic lifestyle. During this part of the movie, Shrek lives a happy, solitary life, away from the stress and burdens of society

All Star is a watered down 'fuck the world' song for children. People call him a loser but he doesn't mind taking the back streets because YOLO. Nope, Donkey is quite clearly the unaware autist. Everyone finds him annoying, everyone tells him to shut up, and he never responds to such sentiments, as if they never reacted to his behaviour at all. Every once in a while the other characters indulge him, like when Fiona tells him to get the "blue flower with red thorns".
However Donkey does demonstrate self awareness at times, so you could alternatively see him as the cyborg/straight up normie who constantly acts obnoxious to lighten the mood and distract from otherwise heavy issues, like when he ignores Shrek's speech about onions and talks about parfait in the buttercup field.
