There are a lot of them that are pure shit, but that's normal. Most of the ones in the reccomendation chart in the visual novel general in /vg/ are worth playing.
Which VNs have the most choices? I don't like the linear ones, I feel like I may as well be watching the anime.

Katawa Shoujo is good. You start out expecting lewds and get hit by a brick of feels.
You have to play good ones, most of which aren't translated to English because most translators would rather work on chuuni shit.
Pic related is top-tier escapism. All the girls are well-written and likable, and you build relationship with them slowly over time. None of that "it's not like I like you or anything b-baka" or you fall face first into her vagina shit. Just you bonding and getting to know about the girl you're most interested in and slowly falling in love.

It's alright. Characters are decent but the plot is a little boring.
I highly recommend Euphoria, english patch just came out a couple weeks ago. Total rollercoaster ride of emotions. A couple words of advice though: some of the sex scenes are gross but it's not fetish shit. It's meant to gross you out and desensitize you. And make sure you keep on playing until you get the true route, use a walkthrough if you need to. If you only play one of the regular routes you'll feel very unsatisfied.
Comyu and G-senjou no Maou are good if you want a serious plot. Koisuru Natsu no Last Resort, Princess Evangile, and Osananajimi wa Daitouryou are good if just want fun weeaboo shit.

There's a lot of reasons why VNs/Anime girls are attractive.
1)Distance from them, you don't have to actually talk or think about them, the MC does all the work.
2)Story arcs and tone usually mean that nothing bad happens. If you like that sort of thing there are games like that, but usually you can feel an inevitable sense of romantic satisfaction
3)you're already focusing on another reality, so even if there are issues like wars or shit going down it has nothing to do with you
4)the girls are designed to cater to you, so its rare that you get a girl in the medium who will do things like find other guys attractive, be a bitch, do stupid crap(unless for laughs). Usually there is some sort of hurdle for the MC to clear to 'win' the girl but that only makes it more satisfying
The problem is that you need a great deal of concentration and a willingness to forgo your reality to get to the hynotic state where you are drawn fully into the game world. Once you reach that state, your life, body, etc seem like trival things so when you return there is a depression like getting off a drug that can occur if you really got into it.
Reality has the advantage that its hard to run away from, so I think it's necessary to cultivate a minimum amount of satisfaction in your real life(job, some friends, purpose, good environment) to fully enjoy a proper escape like a VN because otherwise your brain will send danger signals like 'I just can't do this all day!"
Then there's burnout, which always happens. Its a very horrible feeling if you have nothing else in life so thats why having other shit to do is important.
As for real women, I know /r9k/ is just simply at a level where they can't handle a real relationship but you might want to think about small socializations with women when you can. Since jacking off to 2D all day makes you feel like a loser no matter who you are.

You can definitely feel a bit burned out if you're doing nothing but reading a VN for days straight, because yeah, you can get way too immersed for your own good.
But just a couple hours a day, as long as you have some other hobbies, aren't really detrimental at all, and I think it's a lot better for your mental health than obsessing over women.
