And it's not as though everything in the dialogues is something that Socrates said word-for-word. Yes, part of the dialogues are things that he said that his students wrote down, but they're not exact copies, many of the dialogues are probably condensed versions of many conversations, and they're all fiction. The point of them is not to provide a historical account of who Socrates was or of his words exactly. They're thought experiments.

This is especially obvious in Symposium and Phaedrus, where things that happen are clearly dramatic elements meant to add something to the dialogues (the "seduction" under the tree, Alcibiades' entrance, etc.).

The real merit of Socrates in Plato's dialogues was that he often showed people in higher classes of society that even though they were convinced what they were talking about, by asking questions, it was always revealed that they understood little of the issues they were handling.
