If it is not always preferable to pursue, it must be a circumstantial threat to something else they value more. This process of comparing difficult implications of different values can continue until you reach the top of their value hierarchy, and there is what they are surely extreme about, assuming they are not hypocrites.
Secondly, moderation would be incoherent as an ends. How do I determine how much is moderate with no established minimum or maximum of any given thing that I must use in moderation? These things can only be substantiated according to more concrete ends such as non-aggression, conservation of a social order, equality of blessedness among people, the relief of pain, etc.
