Depends on the customs of where you live, in my country it is expected that both thank each other.

Either way, it shows you have manners which is nice.

I say thank you. I don't care if they say anything back, they're working for a big ass company, they don't have anything to be thankful for when I shop there.

Usually the employee says thank you when given the money and the customer says thank you when getting the change back.

Say thank you when the person either hands you the receipt or the bag(s). If you're grabbing the bags for yourself, say thank you when grabbing the bag.
