I did concede last night that it was a little underdone for my liking. I should of left it out to rest at room temperature for longer. MOST of it was what I would consider "medium rare" but the very middle, which the pic is of obviously, was a bit too rare.
That said, it was still one of the better steaks I've had in my life. I used Gordon Ramsays butter basting technique that another anon showed us a video of.

There is....
Garlic/Onions/Carrots/Celery. This is what you start with, cook this shit in oil in the big pot you're going to make your sauce in.
Then add in a big can of diced stewed italian seasoned tomatos, big can of tomato sauce, a jar of regular ragu, 2 small cans tomato paste, fresh halved mushroom, can of sliced mushrooms, and a pound of browned ground beef.
Then some salt/pepper/galic powder/oregano to taste. I go heavy on the oregano.

Here are the meatballs I'll be using.
I know this isn't a flattering pic, but food preparation isn't all flowers and roses. They were freshly prepared at Metro and I cooked them earlier today.
If I had of planned on making a meatball sandwich tonight I would of made my own meatballs, but it was a last minute thing.
They're actually pretty fucking good though, and my sauce makes anything magical.

I go to this bakery every Sunday.
Usually for bread (their pumpernickel rye is amazing), proper bagels, lunch meat, cheese and big pickles. I always pack a lunch for work and it's always made with stuff from this place.
I've never actually bought any sweets from there, but today when I was waiting in line for my meat I just kind of broke down and had to try some.

They are amazing, they are my second favourite sweet just a big behind nanaimo bars. They're so rich though, I'm usually happy just eating them half at a time.
