Ignoring general improvements like inventory management, changes to weapon upgrading, etc:
DkS1 > Bb >DkS2
Dark Souls' second half was unfinished and shit compared to the first half but the first half was great and the lore, one of the prominent features of the game, held up. Dark Souls 2 was on the brink of failure when they literally stitched all of the levels together as quickly as they could, you should realize this after experiencing the many empty hallways. People always give Tanimura shit but he saved it from being a complete disaster which is why he's on the DkS3 team. Also, soul memory and the blatant fucking over of invaders. Bloodborne took the game into a different direction that I personally disliked but it's execution, aside from the labyrinths, was great. I very much disliked the removal of many stats but that's just me.
