The idea behind saying it is that it implies that the post being replied to was written with the sole intention of getting replies, with replies being shown by the (you) after the quoted post number.

Honestly, I sometimes just reply (You) as a means of appreciation. For example if I see a good joke/reference, I might just reply something like "Here's (You) for you"
