Expect crowds in the old city, Holy Sepulcher is always packed. It's also going to be hot as fuck if you're going late July. The biggest headache is pickpockets. I went 4 years ago and did not feel threatened at all.
While you're in Israel you might also want to check out Tel Aviv, the beaches there are nice and the nightlife is lively.
