This isn't actually true when we talk about Texas. They have a State Constitutional Amendment allowing them to request secession at any time. However, the Civil War made it clear that even such language would not dictate the national action, and the United States would likely be obligated to go to war to prevent the secession.
So, legally, Texas may have it well within it's right to try and leave, and there is nothing in the Constitution or Bill of Rights saying the government of the U.S. shouldn't allow it. But you are correct, the U.S. would fight it anyway.

Because Texas abrogated its rights under the Tyler-Texas Treaty when it used its right to secede and then promptly joined the Confederacy in its war with the Federal Government. Its subsequent defeat rendered Texas conquered territory under reconstruction and it was formally annexed under the terms of the CSA's unconditional surrender.
As for them trying to leave, the Union is indivisible. The only way they could do so peacefully is through constitutional amendment. Without a Constitutional amendment and the permission of the requisite number of States, a unilateral Texas secession is illegal under US Law, and an act of War.
