As part of my work, I do in depth research into Pacific Islands. If you guys have the money to back yourselves up, your best bet will be small island nations with plenty of self-governance.
Tokelau is interesting. It has lots of autonomy to the point where their village councils (on atolls of 500 people) make their own laws. Their infrastructure is decent in that we fund their entire fucking country. If you approached the Tokelau Government/atoll government and asked them for an atoll to colonise, they would probably let you.
The biggest issue you guys will find is the infrastructure vs autonomy issue.
Either you can settle in areas that have people and vital infrastructure, or you can settle in places where you can rule yourselves.
And don't underestimate how vital infrastructure is. No housing materials, no machinery, no electricity, no easy, abundant nutritious food source. It would need to be on an uninhabited atoll close to one with infrastructure. Then you have the issue of land clearance.
Going with the Tokelau example, you could got permission to settle on one of the atolls (which are relatively small, but could certainly support several hundred people. Logistics is your main issue. In order to start building you need to be able to transfer lots of material between the atolls. This would require lots of small boats, or the hiring of a larger ship. You would then need machinery to remove trees from the area. Following this you would need to setup routine trips to the populated areas to resupply. Also, the local police would routinely investigate your island, along with some of the locals.

Catalonia, Quebec, Scotland and Wales are all historically "independent" or at least somewhat autonomous region - and even in these cases a referendum to leave their "home country" is a long and difficult process.

I haven't researched French Polynesia before. Straight off the bat it has comparatively good geography. While Tokelau is surprisingly same from environmental hazards, many smaller pacific islands get fucked up regularly by cyclones/storm surges/tsunamis. If you're going to settle you need detailed analysis on environmental hazards and their trends. Once basics are down, do a risk assessment for each type of natural disaster.
Your primary issue will be your approach and end game. What do you want the colony for? If you want to make it a libertarian paradise where everyone gets free drugs and guns, it's not gonna work because the local government (Or France?) won't tolerate it.
If you just want to build your own politically like-minded town separated from the locals, it's definitely doable with enough money. But even then, citizenship will be an issue.
My recommendation for settling there would be thinking through a scheme of large-scale settlement, including citizenship and exact location (do scouting trip for ideal places, talk to locals etc). Second part would be to come up with financial stable plan, manage resources, figure out how things will run.
Nuku Hiva is pretty advantageous in that it has lots of fairly diverse land, funding from French Government, an APOD and SPOD, small local economy.

This is nothing but fantasy, there is no viable place on Earth that's unpopulated and outside of sovereign jurisdiction by some country polonists would have to deal with one way or the other.
A practical way of kickstarting a polony would be to identify a suitable country that's willing to codify the required preconditions for such a place, leased for x amount of years within its borders. Unfortunately, there is little to no information about Pulau Serua. The only information you could find it about it is in Indonesian, but they also don't have that much information either.
But judging by the pictures, it looks like there are no people there and if there were, then it would be ~10. This is way better than having 2,000 people.
The island is very isolated and nobody has ever heard of it, which means the Indonesian government wouldn't really care if we settled in that island.
I guess the only disadvantage is that there's a volcano, but nobody knows if it's still active or has ever erupted. But judging by it, it doesn't look that bad.
Another disadvantage is the lack of infastructure, but it shouldn't really matter since it's still a small island.
