I've got 1000 .223, 1000 9mm, and 1500 .22
I plan on adding more every time I go shooting. I order a bunch and whatever is left over goes into the stockpile. It's not a bad way to stay ahead of the curve and keep myself supplied while still having fun.

I've been prioritising food and assorted gear. I'd rather run out of ammo and die from getting shot than try to raid someone and... die from getting shot, especially since an ample supply of gear at home means I get to avoid needing to go out looking for trouble in the first place.

As point already made, cheaper in bulk, and 1000 rounds is a common bulk pack. For normal maintenance/practice, 1000 rounds is between 8 & 10 trips to the range ... but that's also 1000 rounds of at least three different types of ammo (for me). Meaning, I burn about 3000 rounds every 3-4 months, including some miscellaneous on other weapons since I'm often at the range with friends and we practice with each others' weapons.
If we have one or two blow out days, where we burn through 500-800 rounds each, it would be pretty easy to go through 3000 rounds in three or four trips.
Sound like a lot? It's actually not very much, especially in my house with two shooters maintaining several weapons between us. If you own weapons and keep them maintained and keep yourself in practice ... which you absofuckinglutely should if you own any weapons ... you'd better bank on burning at least 3000 rounds through 3 calibers & 5 weapons every 4-5 months.

I use less these days because I've kept in practice for years, so my range sessions are nowhere near as intense as the first couple years, when I was burning closer to 3000 rounds per month. Just shooting skeet will burn 200 shells minimum per range visit (that's 8 rounds of skeet, a moderate day of practice).
I don't even stock up for a Happening. It's just normal to have ~1000-1500 total rounds of all calibers and gauges at any given time, and occasionally reloading plus orders coincidentally stack up to about 5000 total.

Dude, you need to get a reloader and make your own shells. Buying premade 12 gauge is a waste of money. You can reload for less than half that cash, easily, and sometimes get it down to 20% of new cost if you get lucky while shopping around.
Save new purchase on shotgun for quality slugs and specialty shells that you keep on hand for real use rather than practice. Fun thing about reloading is developing custom loads, both with powder and what you use for shot. A lot of alternative options there. And, if you're in the zombie apocalypse, always be nice to be able to reload shells instead of figting the road warriors for scavenged boxes of new.
Also, consider moving to 20 gauge. I've got a pair of Remington 870 20 gauges that I picked up cheap years ago. Probably the most reliable shotguns ever put into production. I keep them in secure locations on the homestead where I can access them fast if needed. Using 20 gauge for your main practice and your backup shotguns will save you serious cash over 12 gauge. If you need the 20 for self defense, it kills just as hard as a 12 so long as you actually hit what you're aiming at, and the gun is a bit lighter, less recoil, and you can carry 5x 20 gauge for every 3x 12 gauge for same encumbrance.
