The deadliness of a supervolcano eruption is somewhat overrated. For reference, Yellowstone erupted 640,000 years ago. There were several species of human around at the time, such as homo erectus. None of those species were wiped out. None of them had our technology, or much technology in general. Homo erectus continued to hang around in the post-eruption world for another 570,000 years.
Don't get me wrong, an eruption would be devestating. It would wreck the USA and, by extension, the global economy. A lot of people would die. But we're not looking at a global extinction event. Remember, the kind of event that would legitimately wipe out "all plants and animals" is the kind of event that has never happened since the evolution of complex life several billion years ago, because we wouldn't exist if it did.
