The simple answer is because it's not in the interest of the United States to have millions of North Korean refugees pouring into either China or South Korea. While it's not necessarily in China's interest either, it does have plans to take advantage of such a situation. As it currently is, North Korea is a useful buffer between China and the United States' Asia Pacific allies (more or less client states.)
It's not much of a threat either. It's a paper tiger that can possibly kill thousands of people in either a first strike or a reaction strike on Seoul, but not much else. Its defensive and offensive capabilities could be obliterated by a single U.S. aircraft carrier, or even forces in Okinawa et al, in a matter of hours.
So yeah, the CIA could kill the fatman. Then what? That's the problem.

But to answer your question, China is seeking greater influence in Korea and Japan.
A re-uniting Korea presents all kinds of opportunities to seed influent agents, whether people or ideas, especially if the North Koreans have a hand to play. Necessarily South Korea would need allies in the current mid-level leadership, even if the North was completely and utterly defeated through a shock-and-awe campaign. The mid-level leadership is best positioned to know its people, and to steer its people toward unification, and it's also best positioned to act as Chinese agents of change. There are many paths that could be taken, and I could expand, but China would definitely have much more power in Korea if the North was to be integrated in the South.
