Modern aviation crashes only result from two causes:
1) Something goes wrong on takeoff/landing and the plane impacts the ground. A detachable cabin wouldn't do anything in this case because there isn't enough time for it to detach and be slowed by the parachutes before impacting the ground; and,
2) Something explodes inside the plane in mid-air. Detaching the cabin also does nothing in this circumstance because the explosion likely occurred inside the cabin and has either damaged the cabin to the point where it will just break up after being detached, or the systems necessary for detaching the cabin have been damaged in such a way that the cabin is no longer capable of detaching.

And to follow up on that, there are actually systems you can buy for single seat aircraft that function like this, ie there is a parachute attached to the aircraft that can be deployed to in case of an emergency and which will allow the plane to safely float to the ground.
They're not very popular because, again, nearly all crashes take place during the takeoff/landing phase at which point you are below the minimum altitude for the system to be able to function.
