Its not difficult to lose a plan on radar. Especially when were talking about third world country tier ATCs. Basically what probably happened (if the plane was hijacked) was the terrorists switched off the transponder. The transponder sends out a signal which adds a code to the blip that appears on the ATCs radar screen. When your code is gone, it's very difficult to locate and identify the blip that is the plane, especially when there is a ton of other traffic in the area.
Now, even with the transponder off, the plane is not undetectable or invisible, it's just hard to track. With no transponder you dont get altitude or airspeed, and it's hard to distinguish the blip from other shit the radar is picking up. If you have another tower on call and can work with them to identify blips which are moving in such a way that they are probably the plane, then you can still track it. In this case, it's likely that the Egyptians didn't or couldn't contact another station which was monitoring this area. Or maybe they did, I havent read too much about this incident yet.
And yes, there are other ways to track planes like satellite links and shit, but radar is how most ATCs track their traffic. I don't know if this plane was fitted with any of the other tracking avionics that many companies wanted to use after the Malaysian Airliner thing.
