Why aren't Mexican mestizos (White + Native mix) simply called mestizos or mixed race in the USA, and instead they resort to convoluted words like "Hispanic"?

Spanish people are White. So are most people in Argentina and Uruguay. You don't magically become another race just because you speak Spanish. But these are not the groups coming to the USA.
So why not call a spade a spade?
It would make assimilation easier to just refer to Mexicans, Guatemalans and so on as mixed race rather than lump them with the white Cubans, the mulatto Dominicans, etc.
And it would separate the few White Mexicans that do exist (like Canelo Lopez) from the mestizos, breaking up the monolithic voting group Mexicans are in the US Southwest.

Nobody uses this term outside of the USA.
It was made up overnight by the US Census bureau in 1970.
Imagine if someone called Nigerians "Anglos" because they spoke English.
