The skills required are highly transferable - if the mining industry tanks then you can just go do HR at another company. It's an eminently sensible degree. It's not a glamorous job, but with internships employment is almost guaranteed. HR does not require a degree, which means that if you have a degree you're vastly out competing most candidates for the position. Plus, if you go into consultancy (and you're good at it) there is the potential to make a lot of money.
I picked the best degree for somebody looking for stable work and decent pay. I picked political science because I enjoy it and to challenge myself. I will probably go for Honours in it.

I sincerely doubt she's going to manage much better than a 160 even with extensive coaching (the lsat primarily tests logical thinking ability). LSAT+GPA are the main determinants of getting into law school.
