15 - 7 = 15 - (5 + 2) = ( 15 - 5 ) - 2
15 -5 is easy (10)
10 - 2 is easy (8)
which is one way I do it in my head anyways.
I guess you could also do

Agreed. Memorizing a multiplication table is a pretty good foundation for children becoming better at relatively simple math. Past a certain point, it obviously becomes more so about memorizing general and specific mathematical rules and having enough examples memorized so that you are able to deconstruct/reconstruct sequences and apply your skills to quickly solve new problems.
This teaches kids to use powers to ten for quick mental math when the numbers get larger. Nothing wrong with this at all.

I can do maths in my head insanely better than most people around me, and I do it in a similar way to what's shown above, anchoring in on multiples of 10 for efficiency.
