I gave a lot of concerts and did a lot of competitions when I was younger (mostly during high school and a before). It's hard for me to explain precisely, but lots of people can sit down at a piano and hit the notes while sounding mostly lifeless. They miss out on certain expressive flourishes, and they don't genuinely inhabit the piece of music. For them, they just sat down at home and played all of the notes in the proper order over and over again until they could replicate it perfectly without many technical errors. That's good technique, but bad artistry.
