Seriously, really good quality ground beef is great at medium-rare. But you need to trust it. Know it's just from one animal (so is less likely to be tainted by feces). Ideally, you'll grind it yourself from something like sirloin and something a bit fattier. Get it up to a temp that kills anything too bad, and then otherwise just enjoy the moistness deliciousness of the burger. I'd strongly recommend Myhrvold's Modernist Cuisine at Home on burger making and keeping them moist (while looking after safety).
