The problem is dismissing a theory as "just" a theory. You are swindling the uneducated by playing on their understanding of a theory (i.e. a hunch), which differs considerably from the scientific definition.
If one were trying to explain the scientific meaning of a theory to a pleb, and actually had the intention of being honest, they'd say a theory is "the closest thing we have to a fact, not to be confused with truth, which could someday be overturned in light of new evidence but is the absolute best explanation the combined scientific inquiry of the entire human race has come up with thus far".
Instead, evangelical charlatans willfully interpret a "theory" to mean a hunch and their followers believe them, not knowing any better. I mean, impressed with you understanding of the METHOD, but you are talking about conclusions drawn from an experiment. A theory is often a conclusion drawn from experimental data and reasoning. It can be considered relevant on logical consistency alone.
I'm not doing to get into how evolution fits into that, because I'm trying to cut down on my fedora,but really, it doesn't matter if you aren't a biologist.

These jumps in progression are internally consistent. This isn't a good point against Christianity.
For example, the Jews rejecting Jesus was a reason for the Christian God to give rise to the new priesthood after the Jewish priesthood lost legitimacy once their genealogical records were destroyed by the Romans hundreds of years before Christ.
The Jews are Yahweh worshipers, and Yahweh used to belong to the pantheon of the people living in the Levant. This pantheon included other Gods that through there own mythology or the memery of the Jews literally died. Yahweh was obviously the preferred God of a certain group of people, so they of course downplayed the others and centralized him. Hence the God of Judaism.
All of these things are consistent theologically.
