Keeping your sub hidden is achieved by the crew both knowing their boat's capabilities and manoeuvring accordingly and keeping it well maintained so it runs as quietly as possible, not so much the sub itself.

Nope, flat is better if you use a catapult launch. Ramps are used for conventional launches and try and get a bit more height/lift out of it but comes at the significant cost of sortie times, reduced payload, and reduced range of the aircraft.

UK literally was just too cheap to put in the catapult they designed the QE class with and decided that they were ok with having a substantially less effective carrier if it meant saving a bit of money.
