Because Christianity is easier and had a fancy Emperor help market it to us way back in the day with Churches. Odin had chiefs and longhouses, but was ultimately an ethnic religion that didn't spread through conversion, but birth into the right family.
Also Odin isn't really a personification of anything, that's an idea that came with Christianity to establish a new type of hierarchy. Odin began probably as a real influential figure, and then transcended into a title just like all the God heads in paganism. Just think of al the Roman emperors that called themselves Caesar after Caesars success.
