Carrying capacity doesn't work like that. Overshoot is not only possible, it is the current state of the human population. People can talk about so called green energy, but the fact remains that we have not developed a suitable replacement for fossil fuels. The food and water that we eat and drink depends on the energy from these fuels, and we are using them faster than they are being replaced. We don't need to use them up to be fucked either, we just need to get to the point where we cannot afford to extract them. Then, without the diesel fuel to run the tractors, combines, 18 wheelers, etc... that are used in our food production, we have less food being produced. Without coal and natural gas, the electricity that pumps water and runs refrigeration units that we depend on goes away. The equipment that we use to maintain our infrastructure doesn't run. In short, the carrying capacity of the planet takes a nose dive.
