In my father's day they would write each of them down, memorise them and the circumstances in which they occurred. This was made easier or at least less daunting by going to weekly confession. This might not be a bad idea for you, not only so that you can confess all of your sins but also so that you become fully conscious of all that you have done. These aren't logical conclusions though. These are assumptions. You're correct that the apostles founded the institution of the church, but this doesn't mean that they passed on the ability given to them by Christ to absolve sin.
The priesthood should be seen more as the archivists of the faith. They record Catholic history and educate the faithful on the history of the faith. My father is long dead, but he was physically and emotionally abusive to myself and my siblings. He forced religion on us, but despite his hypocrisy it actually clicked with me. I received all of the Catholic Sacraments growing up, I was an Altar Boy, and I went to CCD every week.
I remember being confirmed in the summer of 1997. I remember being excited. I also remember the Bishop being brought in on child sexual abuse charges exactly 12 days after he annointed me with the name I chose -Anthony.
I quit church after that. I grew to 18, lost 120 pounds, and enlisted in the Marine Corps. I always tried to walk with God and I was hanging in there. I was even a bit of a hypocrite because while on my combat deployments (all 3 of them) I carried a cheap plastic rosary and a small red medallion with a white dove on it that I received from a priest while I was an altar boy. The medalion was blessed by Pope John Paul II they told me. I carried those close to my heart over 500+ days in a warzone. I made it home safe.
I began seriously studying Buddhism for the first four or five years after my discharge. I remember the great things I learned.
Today, I accept Jesus Christ is my savior and mankind's savior because he was crucified for our sins. I believe He was buried and rose again on the 3rd day.
