You can keep beans rice and oats in gallon cans for long term and cheap if you just want to make sure you have enough to last months.
For things ready to eat that last long just think of all the canned shit you normally plop into a pot and heat on the stove. Usually all of that can last many years, just check the dates.
Tortillas with butter/sugar/peanut butter/meat/whatever else you can think of can get you through a lot for really cheap too.
