This is because by the time dinner has rolled around all the BBQ has been finished smoking for hours and is just sitting there being hot until an idiot comes to buy it.

I live by myself and eat reasonable portion sizes, a smoker is an investment, good digital thermometer, preparing everything correctly, etc... I am not at home four to five days a week. If you have the space and motivation, great, and yeah if you're cooking 22lbs for a party or event and have the know how the equipment might make the cost per person worthwhile but if you aren't going to consume immediately then you have storage, or otherwise, "sitting hot" as you put it.

I cook at home, I do sous vide, I have my own dry rub when I do bake ribs in the oven, but it's a very different commitment than owning/maintaining a smoker and keeping an eye on it.

Roasted Spourts recipe:
Brussels Sprouts
Green Beans
Green onion
Rosemary
two garlic cloves
lemon
olive oil
salt and pepper
Cut green beans into 1 inch sections, cut sprouts in half if large leave hole if small. Steam both beans and spouts for 5 min until vibrant green. Cut green onions into small sections, mix beans, onions, rosemary, salt and pepper with a little bit of olive oil. Bake in dish at 425 or 450 depending on your oven until browned on top, mix occasionally to make sure everything gets brown. Before serving squeeze some lemon over it. You can also add bacon or pancetta to this if you want to.

When I'm home, I love to cook as creatively as I can. I eat out a lot and while that gets me opportunities it also leads to eating a lot of "decent" stuff that isn't particularly healthy. There's limits though.

BBQ is one of those things that I can't buy the equipment for and make reasonable use for given my commitments. It's something I love but not something I can reasonably make at home properly given that I live alone and am not home often.

(My job also generally makes eating at home hard because while I save money from not buying groceries for consumption on travel days, I also am less able to take advantage of sales. I either buy what's on sale because it's on sale, or buy what I want at regular price, and whichever I pick I have to contend with expiration on both raw ingredients and leftovers).

Anyhow enough bitching, I love BBQ but it's something that I don't have reasonable time to make at home.

I do have a Chef Alarm btw and agree it's an awesome tool. And a couple thermapens. Thermoworks makes good shit.

Meat is not inherently unhealthy, there is certainly a large quantity of it in the pic. Many BBQ joints in the US cook on a group portion. Red meat in and of itself is not unhealthy.

These are actually less treated foods even by any standard you might consider "natural". A lot of the material is not digestible immediately, gut flora takes advantage of this and it provides fiber for excretion. They taste good, have antioxidants, have a good amount of energy, etc.

It's usually mostly cabbage with a bit mixed in, typically with a vinaigrette. Mayo is used in some cases but better slaws are mayo.

Fat content and quality of a food are not equal. You can eat garbage shit that came in a plastic bag with low calories and a ton of carbs/no nutritional value, or you can have shit your body can break down.

BBQ is not be-all, end-all American cuisine that we eat day and night, it's part of it. I guess the part of it would be to explain, we have experienced multiple cultures and took a lot of great parts of multiple cultures. American BBQ as a concept is something many of us enjoy but let's consider the genesis of this argument (OP).
