The West have been raised on stories of Horses and Dogs being man's greatest allies, that's why we find it abhorrent to eat them. Every year there is some horse movie and we all grew up reading stuff like Big Red.

A horse has many more uses than a cow.
With the mechanization of agriculture ,we've seen a lot of horse meat ,especially in eastern Europe ,and it's freaking delicious.
It's just not as anchored in culinary tradition ,because they usually flow down from the peasantry and you could probably have a dozen cow for each horse.
It doesn't make sense to have horse meat as a regular treat ,so they're usually just delicacies.
Kinda why you don't see elephant or tiger meat : it's just too expensive.

The connection between man and horse just kind of grew, like man and dog as they got respect for the work they did.

Yeah that doesn't surprise me since the US had a much nicer industrial revolution and agricultural mechanization ,but it was brutal in most of Europe.
Horses passed from being the most important tools to absolutely fucking useless in less than 20 years,so surely for horses breeding farm and all (let's not talk about the breeding season game)you have to somehow make money.
I speak for Romania because somehow it interested me but they had it pretty rough. During the 70s-80s the passed from a subsistent farming to the opening of the european market and had to modernize. Romania was a pretty horse friendly land so they had shitload of them for no other reason than farming (Romania is a pretty good farm able land).
But yeah I've a hard time seeing the agricultural situation in the US. Wish I had more info about that. Mind clearing some questions about it ?
