All the practical effects and background composite work still looks fucking gorgeous and since it's practical it doesn't look aged at all.

I thought that a lot of the interaction between characters was really genuine. Frodo/Sam, Frodo/Gandalf, Bromoir/Aragorn, Merry/Pippin, Bilbo in general, and pretty much every scene involving Faramir in the extended editions stand out. It's actually pretty impressive how much of the CG still holds up. Most of Moria still looks good, and the Balrog's hardly aged a day. While I love the movies and the extended versions are some of my favorite movies, I see where you're coming from. Despite all the great locations, costumes, the incredible music, there are some parts that stand out as being very Peter Jackson.
Most noticeable in the action scenes. Take the fight against the cave-troll in Moria for example. In the book, the company holds a strategic choke point and kill maybe 30 orcs, the cave troll is scared off after Frodo stabs it's foot under the door. In the film version, you have a whole shitload of orcs just walk in and have a frenzied random battle, while the cavetroll has a bunch of slapstick comedy moments with the hobbits. Or when the company somehow manages to slay like a whole battalion of orcs on the banks of the Anduin. This is the only part the movies really drop the ball in is the action.

LOTR was pretty much a miracle when it comes to adaptations; it shouldn't have turned out nearly as good as it did, let alone a trilogy that ranks among the best of all time. I don't think that anyone would have pulled it off nearly as well as Jackson did at the time, in fact knowing how well they turned out I'd almost be afraid to let someone else direct it if I could.
