Plain and simple, it was greed. Hitler was jealous of how Great Britain enslaved India and he wanted his own pet country to help out. Since Poland was going through a communistic time and killing off all of the ethnic Germans because they posed a threat to their ideology, Hitler took the initiative to invade.
Biggest fuck up of his entire leadership. If he never would have invaded then Germany would have slowly taken control of Europe rather than one fast swoop but he got cocky.

It wasn't about use, it was about saving his people. West Prussia had been given to Poland after Germany's defeat in WW1 and ethnic Germans in the region were suffering brutal oppression, discrimination and crime including murder and rape without any justice. Hitler had to intervene, just like he did in the Sudetenland. He entered with only the interests of taking West Prussia, but when Britain and France declared war on him, he knew he couldn't be fighting a war on two fronts and had to conquer the rest of Poland which was well within his power.

Simple answer: He wanted to dominate the weaker states and didn't think the West had the balls to do anything about it. The end goal was to eventually divide entire Europe between the Reich and the Soviet Union.
The pretext was the Polish atrocities towards the ethnic germans, some real, but most just really hyped up by the propaganda machine.

The war had started way before Poland
The first place Hitler took was Alsace-Lorraine because of the steel and iron there. It was always a hotly contested area between france and germany throughout history. He also invaded the Czechs to get the vickers tank factory the british had set up there. This was all before Poland, too. Everyone knew war was coming and Hitler had annexed and invaded areas specific for empire building before poland.
