Ask the butcher for a marrow bone and ask them t band saw it lengthways in half. Then you can scoop out the marrow.
You want around 5% bone marrow to 95% mince.
When you mine the meat, keep the strands parallel try and keep a even distribution of the various cuts and the bone marrow as you feed it into the mincer. This way you can keep the parallel strands as they come out the mincer without having to mix them. Obiously season the meat chunks before putting them in the mincer.
If you keep the stands parallel, this will create the most succulent burger as you bite through it.
The bone marrow adds richness and intense beefy flavour, also a bit of moisture.

It's texas toast, topped with ground beef. Some places use steak or roast beef. Sometimes Chicken too.

While a chef de partie in a michelin starred venue can earn a bit more than your regular, we work all the hours under the sun, so when you balance out the hours worked against pay received you're often better off flipping burgers at mcdonalds with less stress.
Enoy cooking food at home, earn your money elsewhere. If you really want to work with food, start your own thing or look at being a development chef or function chef can be okay.
I worked for artist catering for a few music festivals which was fun and paid well.
here are a few things you can do as a chef which is not so bad, but if i could rewind time i would have never started with it and just went straight into business.

My job is flexible too and I can run them whenever, which is what I usually do at the two hour intervals (10 and 3), but the point is, I usually need an hour of me time over lunch. It's a tough fucker of a life, more than being a line cook. I know a bunch of people who own food carts (I live in Portland and we're infested with them, although every available parcel of land is having a shitty apartment building built on it, so it's getting hard for the carts to find space to call home), and some have made out well and branched out and gone B&M and so on, while some never quite get over the hump, but the common elements are 16-20 hour days and coming up with all manner of insane plans to survive winter.
Aside from location, I think that the key to success is doing one or two things and doing it exceedingly well. That keeps the complexity and waste down a great deal. The rib guy is a good example.
