"Nationality" in this case just means the country your recruit is from since you are a global operation, but even then the vast majority of recruits come from Europe and North America. I haven't looked into all the details. There will be battles but I don't think you will have as much control over the general combat in a large fight, if you directly control large armies at all.
What they have shown so far is the hand to hand combat, which looks hyper-historical. It looks fantastic actually. I'm really excited about that part.
You can alternatively play the game in a sneaky kind of way. There will be pickpocketing and stealing information to blackmail people. It looks like the play style will be open ended, with a variety of ways to approach problems. From outright violence with blade or bow to using intrigue or underhanded methods.
I'm also anticipating the release of Bannerlord, so much.
