Its because they had a team of artisan craftsmen making the episodes. Talented writers, producers, animators etc. Each episode took months from storyboarding, sound design and so on.
Then everyone got fatigued from doing the same thing and gradually left, and now you have talentless hacks churning out garbage scripts in a day and the episode is animated by a computer in 30 minutes.

All three have managed to make me laugh at least once though, which is a far greater accomplishment than most other "comedy" we have these days.
American Dad practically isn't even a Seth MacFarlane show; it's a legitimately funny and entertaining show with little to no faults. The writers for it are clever and constantly produce something new without needing to fill their entire show literally to the brim with references.
