Outside of painting entirely - maybe he wants to cut some flowers, or he's volunteering at a homeless shelter and needs a length of string, or his car window has frozen up, or he needs to dig something out of his shoe.
There are plenty of uses for knives. They are in fact probably THE most useful item you can have on your person, outside of money (which is why people carry then around with them).
