you brain knows that the eye is curved, so it projects all curved surfaces onto a flat mental image. Your brain also flips the images of the eye upside down.
This is why you need two eyes, so you can perceive depth and so that your brain knows how much to un-curve the image. If the Earth was flat, you would only need one eye.
